How to Prepare Delicious Ga Kho Gung (Braised Ginger Chicken)

Ga Kho Gung (Braised Ginger Chicken). One of my favorite Vietnamese braised dishes is ginger chicken or Ga Kho Gung. It's a simple dish of bite-size pieces of chicken, braised and caramelized in a clay pot with ginger, garlic, shallots and fish sauce. It is typically served family-style with steamed rice and a vegetable dish.

  1. It's 1 of chicken (6 thighs) dark meat, remove as much fat/skin as possible, and cut into small pieces.
  2. It's 3 tbsp of fish sauce.
  3. You need 2 tbsp of sugar.
  4. Prepare 1/2 of onion, chopped(diced).
  5. You need 2 clove of garlic (minced).
  6. You need 1 piece of (about the size of your thumb) ginger, jullian.
  7. It's 1 stalk of green onion (chopped).
  8. It's 1/2 tsp of salt.
  9. You need 1 of ground pepper to taste.
  10. It's 1 cup of water.

In Vietnam, the term kho defines a cooking technique. Kho literally means simmering, braising or soldering. (aka gà kho gừng, braised chicken with ginger. The scallions and coriander are well worth adding, as they put in a note of freshness the dish is sorely lacking otherwise. I cooked mine in a covered wok because I'm lazy, but if you have a spare claypot, it's also nicer to let the flavours develop.

  1. On high heat caramelize sugar(about 1 min), then add chicken, garlic, onion, ginger. Stir for 2 minutes or until chicken opaque. Add salt, fish sauce, pepper and water, stir and cover for about 10 min or till chicken cooked.

Ga Kho Gung is a dish that brings a lot of laughs to my family. My mom goes to work really early in the morning and she usually wake up extra early to prepare lunch in advance for my the rest of the family. One afternoon I came home from school to a huge pot of ga kho gung. Slow-cooked chicken with ginger, garlic, and onions. Serve this with rice and plain boiled vegetables to soak up as much of the sauce as you can.
