- Prepare 500 g of local rice boiled.

- You need 100 g of carrots.
- It's 100 g of green beans.
- It's 100 g of onions.
- Prepare 100 g of cabbage.
- Prepare Half of kilo gizzard.
- Prepare 1 cup of clarified butter/ghee.
- It's 1 tsp of salt.
- You need 7 cloves of garlic.
- Prepare 3 of scotch bonnet.
- Prepare 3 cubes of chicken seasoning.
- It's of Water.
I then blended the tomatoes and and peppers separately and fried before emptying into the fish pot. We left to simmer in low heat. Checked for salt before turningoff the stove. And my answer was Palm oil rice.

- Fry gizzard on low heat in half the oil, scotch bonnet and half the salt..
- Keep fried gizzard aside,using the remaining oil,sweat onions to bring out the sweetness.Then add the green beans and carrots,salt and seasoning, one cup of water and allow to cook depending on the quality of your ingredients.
- Add the cabbage last as it cooks faster,when it's almost ready the fried gizzard can be added the the mixture to warm it up.I don't mix them early to prevent the meat discoloring the sauce..
- Serve with any starch of your choice, mine is rice and palm oil stew..
Palm oil rice is even more delicious than Jollof rice. I know, I know; to you it may sound crazy to say that. But with Palm oil rice, the time frame for cooking is way easier than the regular Jollof rice. Palm oil sauce/stew is just another way of making Nigerian fried stew using palm oil instead of the regular vegetable oil. This sauce is very tasty and can be made with or without fish.
