- Prepare 2 litres of water.

Chicken Rarara Biryani instructions
- Marinate chicken with all the marination items above and keep it overnight..
- Wash rice thoroughly and soak it for almost half an hour..
- Meanwhile in a pot, pour around 1/2 cup cooking oil. Once the oil is slightly hot add 2 large chopped onions. Keep the flame medium-high. Once the onions become slightly brown add peppercorns and cloves and saute it for a minute..
- Add the tomato chilli paste, coriander finely chopped, 1 tsp haldi, 1tbsp red chilli powder and cook it for around 5 Mins. Next add the marinated chicken and on a high flame saute everything for 5 Mins. Cover the pot and let the chicken cook for about half an hour..
- In a pot take 2 litres of water. Add star anise, bay leaves, cinammon sticks, green chillies, green cardamom, salt and Vinegar and let the water boil. Once the water starts boiling add the soaked rice to it. Cook on a high-medium flame for about 10 mins until it is 3/4th done..
- Fry the onions until they turn dark brown.
- Check the chicken after 30 minutes and remove half of it for layering.
- In the remaining half add some finely chopped coriander and chopped mint leaves and some fried onions. Put half of the rice and cover it properly. Next add the remaining chicken and repeat the above process. Add the left rice. Add chopped coriander and mint leaves and fried onions on top. Pour 1 tbsp pure ghee all around. You can also add yellow colour for the extra look(1 tbsp water+ 1/4th food color). Dilute it and pour it all around..
